Sloppy Joe Cornbread Casserole
Ingredients:
- 1 package ground beef
- 1 can Manwich (I used the original flavor)
- 1 can corn, drained
- 1 package Jiffy cornbread mix
- 1 egg and milk (as per the Jiffy cornbread package instructions)
- Shredded cheese (as desired)
Instructions:
Preheat the Oven:
- Preheat your oven to 400°F (200°C).
Prepare the Cornbread Base:
- Prepare the Jiffy cornbread mix according to the package instructions, which typically involves adding an egg and milk to the mix.
- Once your cornbread batter is ready, fold in the drained canned corn and add shredded cheese. You can adjust the amounts based on your pan size and personal preference.
- Pour the cornbread mixture into a greased baking dish. The size of the dish can vary depending on how thick you’d like the cornbread layer to be.
- Bake the cornbread base in the preheated oven for about 10 minutes. This will help set the base before adding the Sloppy Joe topping.
Prepare the Sloppy Joe Topping:
- While the cornbread is in the oven, brown the ground beef in a skillet. Once cooked, drain any excess grease.
- Stir in the can of Manwich (Sloppy Joe sauce) into the cooked ground beef. Let the mixture simmer briefly to heat the sauce and combine flavors.
Assemble the Casserole:
- Remove the partially baked cornbread base from the oven.
- Spread the Sloppy Joe mixture evenly over the cornbread base.
- Top the Sloppy Joe mixture with shredded cheese, as much as you like.
Bake the Casserole:
- Return the assembled casserole to the oven and bake for an additional 10 minutes, or until the cornbread is fully baked and the cheese is melted and bubbly.
- Once done, remove it from the oven, let it cool slightly, and then serve this delightful Sloppy Joe Cornbread Casserole.
