Reversed Seared Tomahawk
Recipe:
1. Start coals on the grill
2. Preheat oven to 375
3. Add light coat of olive oil
4. Season the steak generously with salt, pepper and garlic powder
5. Sear each side of the steak for 3-4 minutes on the grill
6. Transfer to the oven and cook to desired temperature. 130 degrees will take 20-25 minutes x
7. Rest the steak for at least 15 minutes.
8. Add the compound butter onto of the steak and enjoy!
Compound Butter (optional) Make before preparing the steak.
Recipe:
8 tablespoons salted butter room temperature
2 teaspoon minced garlic
2 teaspoon parsley finely chopped
1 teaspoon rosemary finely chopped
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon Worcestershire sauce
1. In a bowl, combine butter, garlic, parsley, rosemary, salt, pepper and Worcestershire sauce. Mix until well blended.
2. Transfer the compound butter mix to Saran Wrap and form into a roll.
3. Transfer the roll of compound butter to the fridge to completely set.
