Jalapeño Popper Casserole
Ingredients:
- 8 oz cream cheese
- 8 oz sour cream
- Rotisserie chicken, shredded
- Shredded cheddar cheese
- Green onion, chopped
- Fresh jalapeños, sliced (adjust to taste)
- 1 pack of bacon bits
- Bag of frozen hash browns
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the cream cheese and sour cream until smooth.
- Add the shredded rotisserie chicken, shredded cheddar cheese, chopped green onion, sliced jalapeños (adjust amount based on desired spice level), bacon bits, and frozen hash browns to the bowl. Mix well until all ingredients are evenly incorporated.
- Transfer the mixture to a greased baking dish, spreading it out evenly.
- Top the casserole with additional shredded cheese and chopped green onions.
- Cover the baking dish with foil and bake in the preheated oven for about 1 hour and 15 minutes, or until the casserole is bubbly and the cheese is melted and golden brown.
- Once cooked, remove the foil and let the casserole cool for a few minutes before serving.
