Cotton Candy Cookies
Ingredients
For the Cookies:
- 1-1/4 cups granulated sugar
- 1/2 cup unsalted butter, room temperature
- 1/4 cup buttermilk
- 1 egg
- 1 teaspoon cotton candy flavoring
- 2-1/4 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1 drop soft pink gel food coloring
- 1 drop sky blue gel food coloring
For the Buttercream:
- 1 cup unsalted butter, room temperature
- 1-1/2 cups confectioners’ sugar
- 2 teaspoons cotton candy flavoring
- 1 drop soft pink gel food coloring
- 1 drop sky blue gel food coloring
Directions
1️⃣ Prepare Cookies:
- Preheat the Oven:
- Preheat your oven to 350°F (177°C).
- Line baking sheets with parchment paper.
- Cream Butter and Sugar:
- In a large bowl, cream together the granulated sugar and unsalted butter until light and fluffy, about 2-3 minutes.
- Combine Wet Ingredients:
- In a small bowl, whisk together the buttermilk, egg, and cotton candy flavoring.
- Gradually add the buttermilk mixture to the butter mixture, mixing until fully incorporated.
- Add Dry Ingredients:
- In another bowl, whisk together the all-purpose flour, baking soda, salt, and baking powder.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Color the Dough:
- Divide the dough in half.
- Dye one half with a drop of soft pink gel food coloring and the other half with a drop of sky blue gel food coloring.
- Gently swirl the two colored doughs together.
- Bake the Cookies:
- Scoop the dough onto the prepared baking sheets and flatten each scoop slightly.
- Bake for 6-10 minutes, or until the edges start to brown.
- Cool the cookies on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
2️⃣ Prepare Buttercream:
- Beat the Butter:
- In a medium bowl, beat the unsalted butter for about 2 minutes until smooth and creamy.
- Add Confectioners’ Sugar:
- Gradually add the confectioners’ sugar and beat until light and fluffy.
- Flavor and Color:
- Add the cotton candy flavoring and beat for another minute.
- Divide the buttercream in half and dye one half with a drop of soft pink gel food coloring and the other half with a drop of sky blue gel food coloring.
3️⃣ Assemble Cookies:
- Pipe the Buttercream:
- Transfer the pink and blue buttercream to a piping bag, alternating between the two colors.
- Pipe the buttercream onto half of the cooled cookies.
- Sandwich the Cookies:
- Top with the remaining cookies to create cookie sandwiches.
- Chill:
- Chill the assembled cookies in the refrigerator for easier handling.
