Why do they call it Watergate salad?

“Watergate Salad recipe” It is sometimes said that Watergate salad was invented by a sous chef at the Watergate Hotel, and it was then served at brunch on most weekends. Watergate Salad took off in popularity during and after the presidential scandal which shares the same name.

This is a classic recipe that has been on holiday and brunch tables for generations. My grandmother and mother-in-law both make their own versions of this dish and it’s one of my favorites! I’ve even seen it served at brunch buffets!

This pistachio salad recipe is a bright green, which makes this fruit salad instantly recognizable. If you’ve never tried it, it may seem a little different, but it is SO delicious! The mix of sweet, creamy, chewy and crunchy just works. You just have to taste it to understand!

The other great thing about this pistachio cream is that it is so easy to make! You can whip up a batch in about 5 minutes, using simple and economical ingredients!

Do you need green food coloring?

Some recipes for this type of pistachio salad call for green food coloring. I don’t find this necessary, as the dish is already a fairly bright green thanks to the pistachio pudding mixture.

However, you can add a drop or two of food coloring if you want a really, really rich green, or if your brand of pudding mix is a lighter color.

Ingredients:

  • 1 box of pistachio pudding
  • 20 oz can undrained pineapple
  • 2 cups of mini marshmallows
  • 1/2 cup chopped pecans
  • 1 container of thawed coolwhip
  • (8 oz)

Instructions:

Start by mixing together the dry pudding mix, crushed pineapple, mini marshmallows, and chopped pecans. Next, fold in the thawed Cool Whip until well combined. Chill until serving time.
This recipe can easily be doubled for a large family dinner. You can serve this as a dessert component but I place it on the table with the main dishes. It is always a hit.
You can serve this in a large bowl or if using it for dessert individual servings in clear glass mugs or clear cappuccino cups decorated with a marachino cherry makes a nice presentation.
PS this dessert is sometimes referred to as “Watergate Salad” because Jello came out with the pistachio pudding flavor that same year (1976)

If you want to store extra watergate salad to enjoy later, you can do that too. How long will watergate salad last in the refrigerator? Watergate salad will keep for 3 to 5 days in the refrigerator if the yield has been well drained. The by_rights procedure will preserve the fondant and the worst of the filling. You should not freeze this salad because the whip overflow will eventually break down.
