Ingredients:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 3 (8 oz) packages of cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 4 eggs
  • 1 cup pumpkin puree
  • 1 tsp pumpkin pie spice
  • Whipped cream for topping

Instructions:

  • 1. Preheat the oven to 350°F.
  • 2. In a bowl, mix the graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
  • 3. In a large bowl, beat the cream cheese until smooth. Add the sugar, vanilla extract, and eggs one at a time, mixing well after each addition.
  • 4. Stir in the pumpkin puree and pumpkin pie spice until well combined.
  • 5. Pour the mixture over the crust in the pan.
  • 6. Bake for 50-60 minutes, or until the center is almost set.
  • 7. Allow the cheesecake to cool completely, then refrigerate for at least 4 hours before serving.
  • 8. Top with whipped cream before serving.
