Oven Roasted Smoked Sausage and Potatoes

Ingredients : 

1 package of smoked sausage, sliced into rounds

1 large onion, peeled and chopped

5 large potatoes, peeled and chopped into ½ inch cubes

olive oil

fine sea salt

freshly ground black pepper

sweet paprika

dried thyme

a handful of grated strong cheddar cheese

Directions:

The oven should be preheated to 400°F.

Place a large baking pan (with the sides) with many sheets of foil and spray it with cooking spray. Set aside.

Place the sausage along with the onions and potatoes in one large bowl. Sprinkle with a few TBS of olive oil, and then season according to your taste with salt, pepper, paprika, and dried thyme. Combine with your hands until the ingredients are evenly dispersed.

Pour the mixture on the baking tray and disperse it as widely as possible.

Place the potatoes in the oven and cook for 45 to 60 minutes and stirring once at intervals of 15 minutes, or as long as the potatoes are golden brown and soft. Switch off the oven.

Sprinkle the cheese over the meat and potatoes that have been cooked, Pop back into the oven for a couple of moments to let the cheese melt
