Crockpot Chicken and Broccoli Casserole
Preparation Time: 15 minutes
Crockpot Cooking Time: 2-3 hours
Serves: 5-6
Ingredients:
1 box of Stovetop Chicken Stuffing
1.5 cups chicken broth
3 boneless, skinless chicken breasts, cooked and shredded
Broccoli florets (as much as you like)
1 large can of Cream of Mushroom soup
1/2 bag of shredded cheese (Cheddar Jack blend or your choice)
Instructions:
1. Prepare the Stuffing:
In a microwave-safe bowl, combine the contents of the Stovetop Chicken Stuffing with the chicken broth.
Microwave for 3 minutes to partially cook the stuffing.
Set aside.
2. Combine Ingredients in the Slow Cooker:
In your slow cooker, add the partially cooked stuffing mixture.
Stir in the shredded chicken breasts.
Add the Cream of Mushroom soup.
3. Cook with Broccoli:
If you prefer your broccoli softer, add it to the slow cooker now. If you want to maintain a firmer texture or for a prettier presentation, cook the broccoli separately and set it aside for topping later.
Stir everything together in the slow cooker.
4. Slow Cook:
Cover the slow cooker and cook on LOW for 2-3 hours, or until the broccoli is tender.
5. Add Cheese and Finish:
About 20 minutes before the dish is done, stir in half of the shredded cheese.
If you cooked the broccoli separately, now is the time to top the casserole with the cooked broccoli and the remaining shredded cheese.
Cover and continue cooking until the cheese is melted and bubbly.
6. Serve:
Once the cheese is melted and the casserole is heated through, it’s ready to serve.
