Baileys Chocolate Cheesecake Trifle

Ingredients:

For the Cookie Layer:

  • 2 cups chocolate sandwich cookies (like Oreos), crushed

For the Baileys Chocolate Cheesecake Layer:

  • 8 oz (225g) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup Baileys Irish Cream
  • 1/2 cup semi-sweet chocolate chips, melted and cooled
  • 1 cup heavy cream

For the Chocolate Mousse Layer:

  • 1 cup heavy cream
  • 1/2 cup semi-sweet chocolate chips
  • 2 tablespoons Baileys Irish Cream

For the Chocolate Whipped Cream:

  • 1 cup heavy cream
  • 2 tablespoons cocoa powder
  • 2 tablespoons powdered sugar

Garnish:

  • Mini Oreos or chocolate sandwich cookies
  • Extra cookie crumbs

Instructions:

  1. Prepare the Cookie Layer:
    Crush the chocolate sandwich cookies into chunky crumbs. Set aside.

  2. Make the Baileys Chocolate Cheesecake Layer:
    In a large bowl, beat the softened cream cheese and powdered sugar until smooth.
    Add melted chocolate and Baileys Irish Cream, mixing until well combined.
    In a separate bowl, whip 1 cup heavy cream to stiff peaks. Gently fold the whipped cream into the chocolate cheesecake mixture until light and fluffy.

  3. Make the Chocolate Mousse Layer:
    Heat 1/2 cup heavy cream until just simmering, then pour over 1/2 cup chocolate chips in a bowl. Let sit for 1 minute, then stir until smooth.
    Stir in Baileys. Let cool to room temperature.
    Whip the remaining 1/2 cup heavy cream to stiff peaks, then gently fold into the cooled chocolate mixture to make a light mousse.

  4. Make the Chocolate Whipped Cream:
    In a chilled bowl, whip 1 cup heavy cream with cocoa powder and powdered sugar until stiff peaks form. Transfer to a piping bag fitted with a star tip for swirling.

  5. Assemble the Trifles:
    In clear glasses, layer as follows:

    • Bottom: a layer of cookie crumbs
    • Next: a thick layer of Baileys chocolate cheesecake filling
    • Next: a layer of chocolate mousse
    • Top: a generous swirl of chocolate whipped cream
    • Garnish with a mini Oreo or chocolate cookie and extra cookie crumbs
  6. Chill & Serve:
    Refrigerate trifles for at least 1 hour before serving to set. Serve chilled and enjoy!


Tips:

  • You can make these in individual glasses or as one large trifle.
  • For extra decadence, drizzle with chocolate sauce before serving.
  • Substitute Baileys with coffee liqueur or leave out for a non-alcoholic version.
