Chocolate Chip Cookie S’mores
Ingredients:
For the Chocolate Chip Cookies:
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup semi-sweet chocolate chips
For the S’mores:
12 marshmallows
6 chocolate bars (such as Hershey’s)
Graham crackers, for serving
Directions:
Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
Fold in the semi-sweet chocolate chips.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake in the preheated oven for 8-10 minutes, or until the cookies are golden brown around the edges. Remove from the oven and let them cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
To assemble the s’mores, place a marshmallow on a baking sheet and broil in the oven until golden brown and toasted. Remove from the oven and immediately place a piece of chocolate on top of each marshmallow.
Sandwich the toasted marshmallow and chocolate between two chocolate chip cookies. Serve immediately with graham crackers for a classic s’mores experience.
