Ingredients:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup honey
  • 2 tablespoons dried lavender flowers
  • 6 egg yolks

Instructions:

  • In a saucepan, heat the cream, milk, honey, and lavender over medium heat until it begins to simmer. Remove from heat and let the lavender steep for 30 minutes.
  • In a separate bowl, whisk the egg yolks. Slowly pour the cream mixture into the yolks, whisking constantly.
  • Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.
  • Strain the mixture to remove the lavender flowers, then chill in the refrigerator.
  • Once chilled, churn in an ice cream maker according to manufacturer’s instructions.
  • Transfer to a container and freeze until firm.
